Winemaking Notes:
The 2005 Harvest was large and late.   It was a record year for both rainfall and mild weather.  Early fall weather patterns, coupled with the late crop seemed ominous except for mountain fruit which ripened evenly on thin, volcanic soils.  Careful thinning and leaf pulling made the difference for the Elodian Cabernet, and allowed for full ripeness, maturity and elegance.

Tasting Notes:
The 2005 Elodian Cabernet Sauvignon introduces itself with spicy clove and cedar aromas overlapping a subtle bouquet of dry plums and blackberry. On the palate, dark fruit and more spice intermingle with flavors of cassis and anise while the wine\u2019s rich structure fills your mouth with velvety and complex dried fruit flavors. This classic mountain Cabernet Sauvignon finishes very long allowing for extensive enjoyment of both the wine\u2019s dynamic textures as well as its luscious and pervasive flavors. This wine can be fully enjoyed now but will also evolve beautifully over the next decade or two.
